Combine all ingredients except sparkling white wine into a tin shaker with ice, shake, double strain into a Coupe glass, top with sparkling white wine, garnish and adore.
Combine 1 cup water and 1 cup white sugar, heat until sugar completely dissolves, remove from heat, add 1 tablespoon of dried chamomile for 5 minutes, strain off solids, let chill. Refrigerate for up to one week.
