Combine all ingredients in a glass with ice, top with soda water and stir!
Heat water in sauce pan at 220 degrees. Once the water is starting to boil, mix in sugar. Now let it come to a boil making sure the sugar is completely dissolved. Reduce heat to 180 and add the shredded coconut. Allow it to simmer for 5 minutes. Remove from heat and allow to steep for 20 minutes. Now using a strainer, pour syrup through strainer to remove coconut shavings. Allow to cool then mix in your lime juice.
